ando was david chang's bet that delivery food failed because the food was an afterthought, not because delivery was hard. so momofuku built a restaurant with no dining room, cooking dishes engineered to survive the trip to your door. it was a manhattan-only experiment that lasted under two years. in january 2018 uber eats bought the team and the idea and switched off the app. ando became a line in uber's kitchen strategy.

~ the last words ~

in 2016 i was an engineer in ankara ordering the same kebap i always ordered. ando was a restaurant in manhattan you could not walk into, because it had no room to walk into. it existed only inside a phone, cooking food it hoped would still be good by the time a courier reached your building. it was as far from my life as a restaurant could be, which is part of why it is worth remembering. it was a very specific idea for a very specific city.

ando came from david chang, the chef behind momofuku, and it launched in may 2016. chang's argument was that delivery food was bad by design. restaurants cooked for the table and then shoved the same plates into boxes that ruined them. ando would cook the other way around, building dishes for the box first, tuned to the way food held its heat and moisture on the way to you.

the idea was sharper than the business. running a kitchen that only delivered, in one expensive city, is a thin-margin trade even when the food is good. in january 2018 uber eats acquired ando and took its team into uber's own food operation. the consumer app went dark. chang framed it as a partnership rather than a failure, and for uber it was a way to buy expertise in cooking for delivery, the exact thing ando had been built to prove.

~ the funny part ~

the funny part is that ando was probably right. delivery did keep growing, and cooking specifically for the box did become a real discipline, the whole ghost-kitchen wave that followed. ando was early enough to see it and too small to hold on until the market caught up. being correct and being solvent are different things, and a delivery-only restaurant in 2016 could manage one of them at a time.

~ what replaced it ~

uber did not keep the ando name. what it kept was the team and the lesson, folded into the delivery machine that would soon be everywhere. the ghost kitchen, the meal designed for a courier instead of a table, both became normal within a few years. ando was a manhattan footnote that guessed the shape of the next decade of eating.
